These Breakfast Street Tacos are a great and simple way to add nutrition to the start of your day. They are made with scrambled eggs, red bell pepper, garlic, onion and served inside of a small, warm whole wheat tortilla.

What you need
pinch salt

tbsp sriracha

tbsp cilantro

avocado
tbsp pepper jack

flour tortilla
egg

tbsp extra-virgin olive oil
clove garlic

cup red bell pepper

cup white onion
Instructions
Start by sautéing the onion, red bell pepper and garlic on the stovetop with a touch of extra virgin olive oil or butter over medium to low heat. In a bowl, add in the eggs and use a fork or a whisk to scramble the eggs. Pour scrambled eggs into skillet and use a rubber spatula to turn eggs every few seconds. These will cook fast. Remove pan from heat while you warm the tortillas. Add tortillas to another skillet and heat over medium heat. Then, assemble tacos by adding the egg mixture into each one, followed by the pepper jack cheese, avocado slice, a touch of flakey sea salt, black pepper and a drizzle of sriracha.
