1. Cut waffles into bite-size cubes or tear into rustic pieces. 2. Pour espresso (and liqueur if using) into a shallow bowl. Quickly dip waffle pieces, don't oversoak. 3. Whip heavy cream to soft peaks. 4. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth. 5. Fold whipped cream into mascarpone gently. 6. Assemble by layering soaked waffle pieces on the bottom, add a spoonful of mascarpone cream, repeat layers once more, and finish with cream on top. 7. Chill at least 1 hour or overnight. 8. Dust generously with cocoa powder before serving.
