Lemon Truffles are a quick and easy dessert recipe that comes together in less than 20 minutes. These gluten free no bake bites are filled with a sweet and tangy lemon curd mixture and then coated in white chocolate. A must make for Spring and Summer

In a bowl, combine almond butter, maple syrup, vanilla extract, lemon extract, and lemon juice. Mix well. Then, add in almond flour and mix until a dough is formed. Use a cookie scoop, roll mixture into balls and place on a baking sheet that is lined with parchment paper. Freeze while you melt the white chocolate. Add white chocolate chips to a microwave safe dish with the coconut oil and melt in 30 second increments, stirring well in between each round. Dip each truffle in white chocolate and place back on the baking sheet. Freeze for 3 minutes and then drizzle each one with more white chocolate before finishing it off with lemon zest. Place back in the freezer for 10-15 minutes or until totally firm and enjoy!
